Did you know...
Traditionally tapping begins in the middle of February around this part of Ontario. The past 2 yrs have been very cold and we have been tapping in March. This year, strangely enough, due to weather patterns we might be tapping even earlier than normal.
A lot of people have been asking if the lack of cold weather will effect our sap collection. The only answer we have for this right now is, "Ask again at the end of the season."
